Kale Chips And Baobab
I gave birth to my beautiful baby girl in June 2006. Kairi Rose was my first little miracle child and I was going to make sure her sweet little innocence never touched a fried food or piece of candy. Yeah, I know, I know, I was dreaming! I thought for sure if she was exposed to all kind of food early on she would just be the best little eater in the world.
So here we are 8 years and another sibling later, and neither of my children will eat what I want them to eat! Ugh sometimes it seems like such a fight to get anything good in their little mouths, and then there was Baobab. Seriously, this fruit is the most amazing super food on the planet. One tablespoon is equivalent to at least 10 oranges, a spinach salad, a few cups of acai, two cups of milk and more. (These are not exact, but somewhere around there.) The point is that since this fruit has hardly any flavor and is soluble in just about anything, I can get all those nutrients in my kids....DAILY!
Recently I went to a neighbors house for coffee while the kids played and she was baking Kale. She said, simply toss the prewashed Kale with Olive oil and bake for ten minutes at 375, then turn the kale and bake for ten more minutes. OMG, it was delicious and the kids, ALL the kids gobbled them up! Sprinkling a little baobab on them makes them taste like Salt n Vinegar, yum!
